Baked Chicken Wings

Ingredients:

3 tbsp olive oil
1 tbsp Dijon mustard
1 teaspoon finely minced garlic
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 tbsp lemon zest
16 chicken wings, each halved
Cooking Spray
1 cup grated fresh Parmesan
6 tbsp chopped parsley
1-1/2 dry whole wheat breadcrumbs

Directions:

Combine first 8 ingredients in a large bowl and whisk until combined. Pour over wings, transfer to zip-lock plastic bag and marinate in the refrigerator for 1-4 hrs. Preheat over to 425 degrees. Line a baking pan with foil, spray with cooking spray. Mix together Parmesan, parsley, and breadcrumbs in shallow dish. Coat wings in breadcrumb mixture, then place on prepared pan. Bake for 20minutes and turn over for 10 more minutes.
